Dom Pérignon Œenothèque Champagne 1992, 75cl
Dom Pérignon Œnothèque 1992 has a firm structure, with a backbone of initial aromas leading to airy, delicate flavours. A tender, silky texture gradually evolved into persistent, fresh notes of candied grapefruit and pepper. The bouquet is complex, concentrated and dark, with hints of candied citrus fruits, bitter chocolate, leather and dried flowers. At first deceptively understated, the wine turns positively explosive and layered on the palate, showing remarkable tension, elegance and power, all wrapped around a seriously intense frame. The balance between fruit and acidity is awesome.
This is a marvelous Œnothèque. The 1992 Harvest: Summer was hot. Harvesting took place early, starting on September 14, and the resulting wines were produced from healthy grapes. The Œnothèque is the same juice as the regular Dom Pérignon, except the Œnothèque is aged on the cork while the regular Dom Pérignon is aged in crown-sealed bottles. Once disgorged, the Œnothèque gets a slightly lower dosage than is typical for the original release Dom Pérignon.
